Steamed Trout Fillets 2 x trout fillets skin removed, pin boned and cut into strips across the fillets of approx 1” wide 6 or more bay leaves salt & freshly milled black pepper. Method Use a lidded frying pan with a fan steamer. Put approx 1” boiling water into the pan and fit the steamer. Put bay leaves into fan steamer and place the trout strips onto and around the bay leaves. As you place the trout strips roll them and they will keep their shape once steamed. Season with salt & freshly milled black pepper. Put the lid on the pan, bring the fish up to steam (it is steaming when there is a gentle escape of steam from the pan, adjust the heat to suit) Cook for 7 minutes. Parsley or cheese sauce would be a good accompaniment served with new potatoes and peas. Alternatively you can use other herbs or spices such as fresh ginger when you steam the fish to give it an oriental flavour, it’s well worth experimenting with a few ideas. NB: Fan steamers are inexpensive and can be used in a variety of saucepans and frying pans. They also come in a variety of sizes so go armed with the size of your pan if you need to buy one. Make sure that the pan has a lid that fits reasonably well. |
